Sunflower Sprout Seafood Salad

This salad is full of delicious micro greens! Which for all of you who dont know, or are unfamiliar with, are a nutritional powerhouse! These little greens are packed with vitamins A, B complex, D, and E; they also contain minerals including calcium, copper, iron, magnesiumpotassium and phosphorus. Not to mention, sunflower sprouts are also high in B vitamins, especially folate! So I can safely say that this salad will pack a punch health-wise! 🙂

But there is even better news, as this salad is not only made up of micro greens, it also has kale as its base, and a seafood salad mix on the top! The seafood mix that I topped my salad with contained squid and octopus, a delicious and nutritious combination. Squid not only increases your omega-3 levels, but it also offers other health benefits too! 85g contains 80 calories and 13g of protein. It also provides 20% of the recommended daily allowance (RDA) for vitamin B2, phosphorus and vitamin B12, and contains vitamin B6, magnesium, zinc, vitamin C, vitamin B3, calcium and iron. Octopus is full of several key nutrients, including trace minerals and vitamin B-12. A 3-ounce serving of octopus has less than 150 calories and more than 25 grams of protein! How amazing is that!

Put it all together and BOOM a nutrient dense dish is created!



  • Organic Baby Kale
  • Sunflower Spouts
  • Seafood Salad (Squid and Octopus)
  • Shredded Radish


Combine desired amounts of all ingredients onto a plate and dig in!
