Cheesy Spinach Omelette with Avocado Pumpkin Seed Toast

This breakfast is absolutely INSANE! It is so good for you as well as has the perfect balance of flavours and textures that your mind will be blown! Not only is it very simple to make, and you will most likely already have all of the ingredients at home, but it checks off all of the boxes of nutrients that you body needs first thing in the morning! I would recommend everyone to give this breakfast a try as it will leave you satisfied and start your morning on the happiest of notes 🙂

My favourite brand of bread is Stonemill Bakehouse bread, with their HUGE variety of artesian breads as well as their new Women and Men Wellbeing bread (that I am proud to say I was a part of the developing process of), there is just no going wrong! All their breads are packed full of health and goodness AND are certified GMO free! I smothered one slice of the Women’s Wellbeing bread in avocado and pumpkin seeds because it is my favourite bread out there, but if it is not yours then no worries, just grab one slice of your favourite and do the same!


  • 1 slice of your favourite healthy bread
  • 1/2 organic avocado
  • small handful of pumpkin seeds
  • 2 organic eggs
  • 2 slices of your favourite cheese
  • 1 handful of organic spinach



Make an omelette out of your two eggs, cheese and spinach. While it is cooking on the stovetop put your piece of toast into the toaster and start mashing up, in a small bowl, your avocado half. Once toasted spread the avocado ontop and sprinkle with pumpkin seeds. Put everything onto one plate once your omelette is cooked and dig in!
