Apple Banana Pie Filling for Breakfast

This morning I was in the mood for a something warm, sweet and delicious! I wanted to try something new, and after seeing a picture of a TO DIE FOR APPLE PIE the night before, I knew what I had to make! This recipe is made up of 4 simple ingredients and checked off every box of my crazy morning craving. It was a one pan kind of breakfast, that takes all of 5 minutes to make!! It is vegan, gluten free, refined sugar free and loaded with potassium, fibre, protein, vitamins and antioxidants. It is a quick rendition of all the good and scrumptious parts of an apple pie, with the added sweetness and caramelization from the banana. The warm lovely smell of cinnamon and apples cooking on the stove top is identical to that of apple pie, so all in all it was a win win!

Give this recipe a try one morning, afternoon, or evening and let me know what you think!

  • 1 organic apple
  • 1 large organic banana
  • 1/3 cup gluten free oats (or whatever type of oats you like best)
  • 1 tsp cinnamon

After washing your apple, slice it up into thin segments and add to a lightly oiled pan on medium heat. Pour 1/4 cup water over the apples and add your cinnamon on top. Slowly stir around the apples for a few minutes. Sprinkle your oats over the apples and then your banana slices and gently stir all together. You can add more cinnamon at this point if desired. Take off heat once your bananas are lightly brown and your home is filled with the lovely aroma of apple pie!

Enjoy, B
