Gluten Free Cauliflower Dip

So…I looked in my fridge at what I had left for the week to make a meal out of and what I had left had been staring me in the face all week. It was a huge cauliflower. Don’t get me wrong, I have no dislike towards the delicious versatile vegetable, yet what I was avoiding was the time that it would take to make and prepare a dish with cauliflower in it! It couldn’t be something that I had to bake, since that would take too long, since school is picking up and there is lots of readings to be done tonight, and not something that I had to use the food processor for, for the same…the time that would take to wash and dry everything. So what could I do with my huge cauliflower that was quick, simple and delicious?

I quickly chopped off the florets and put them into a pot of boiling water, keeping myself busy for about 10 minutes waiting for them to cook. Then looked at what I had in the pantry and quickly threw a few ingredients down onto the counter that I could combine with it to hopefully taste good. Once the cauliflower was done I strained the water, tossed in some gluten free bread crumbs, corn, garlic powder, cheese and chilli powder and gave it a taste. AMAZING!!! I wanted to eat the whole bowl straight! I was forced to show some self restraint and quickly chopped up a pepper and dipped it in the cauliflower combination and it was DELICIOUS! Then reached for a chip and dipped it and OH MY GOODNESS IT WAS AMAZING!

This quick, simple combination of ingredients was my saviour for the night!! So quick to make, such simple ingredients and SO DELICIOUS WITH EVERYTHING, it must be made again and stored in the fridge so I have some available for me all week!! What can you saw goes with, in and on everything beside guacamole?!! NOTHING!…Except for this!

It is such as incredibly versatile dish, you can add it to anything from a salad, to a wrap, to a side dish for meat or fish! Give this recipe a try and see how DELICIOUS, EASY AND FAST it really is!!



  • 1 large head of cauliflower
  • 1/2 cup grated cheese (parmesan is best, but you can use whatever you have on hand)
  • 1/2 cup frozen corn (heated until warm)
  • 1/3 cup gluten free bread crumbs
  • 1 tsp garlic powder
  • 1 tsp chilli powder


  1. Chop the florets off of your cauliflower and leave to boil or steam for 10 minutes (or until soft enough to mash with only a fork).
  2. Strain the water out and put into a bowl. Mash the cauliflower florets up with a fork and then add the cheese first (so that it melts) and the the rest of the ingredients.
