Banana Nut Pancakes

These super light, fluffy and delicious pancakes are the perfect quick and super easy breakfast, full of protein and fiber! They are also GLUTEN FREE, SUGAR FREE and you can add anything from fruit to chocolate to coconut to make them your own! The ingredients are very simple, which is wonderful because you will most likely already have all of the ingredients on hand in your kitchen 🙂

Give them a try and please let me know what you think! I doubled the recipe because I was making it for two people and it made more than enough. All you need is one bowl and a fork and you are good to go!

  • 1 ripe banana
  • 2 eggs
  • 1/2 cup almond flour/meal
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 cup apple sauce
  • 1 tsp baking powder


Add the banana to a medium sized bowl and mash it up with a fork, until it is of baby food consistency. Then add the rest of the ingredients and stir all together until there are no lumps or bumps and until everything is nicely combined. Pour your desired size of pancake into an oiled pan on medium heat and flip once lightly browned.

    1. Hi Sarah! For one batch, which is what is listed above, I made 6 pancakes, therefore each pancake would be close to 80 calories.This is not including the maple syrup or the peanuts on top. I hope this helps!
