How could a dessert be any better!?  Simple…IT COULDN’T! 🙂

This is a great treat to bring to a summer bbq or get together, it travels nicely and will be a crowd pleaser for sure!

  • 2 cups old fashioned oats
  • 3 tbsp coconut oil
  • 2 tbsp almond milk
  • 1 cup pitted prunes (or dates)
  • 1/4 cup chia seeds

  • 1 cup almond flour
  • 1/3 cup almond milk
  • 1/3 cup maple syrup

  • 2 cups pitted dates
  • 1/2 cup salted chopped peanuts
  • 2-3 tbsp water
  • 1 pinch of salt

  • 1/3 cup coconut oil (melted)
  • 1/3 cup cocoa powder
  • 1/3 cup maple syrup

  1. Line a 8X8 square baking pan with parchment paper and set aside.
  2. In a food processor blend all of the crust ingredients on high. Press this mixture into the bottom of the square baking pan.
  3. Place the middle layer ingredients into the food processor and blend on high, it should look like dough. Press the mixture over top of the bottom layer.
  4. Place the caramel layer ingredients into the food processor (except for the peanuts) and blend until it is spreadable consistency, if it is not then add a bit more water until it is.
  5. Add the peanuts to the spreadable layer and then spread over the middle layer.
  6. Place the top layer ingredients into a bowl and microwave for around 30 seconds (until the ingredients are liquified). Spread mixture over the caramel layer.
  7. Freeze for 3-4 hours or until set.
  8. Thaw for 5-10 minutes before eating, cut into squares.
